Cabbage and Carrot Salad with a Tangy Dressing

Ingredients

1 head or ½ head cabbage, chopped
2 carrots, sliced very thin or grated
3 radishes, sliced very thin or grated
¼ cup slivered almonds, toasted
2 T sunflower seeds, toasted
½ cup roasted peanuts for topping

Dressing
⅓ cup rice vinegar
¼ cup sugar
2 T vegetable oil
2 T honey
2 T soy sauce

Directions

Combine dressing ingredients in a saucepan and heat gently until the sugar is dissolved. Set aside to cool. Mix together all salad ingredients except the peanuts. Drizzle dressing over, toss peanuts on top.

Unexpected side benefit is we eat more veggie meals because we plan around our veg box not around meat purchases, so it’s worked out cheaper and healthier.
