Grilled Pepper & Onion Potato Hash

Ingredients

5-10 Red Irish Potatoes, cut into ½” cubes
2 tablespoons olive oil
½ large onion, peeled and sliced
1 Spanish red pepper, seeded and sliced
4-5 frying peppers, seeded and sliced
2-3 Roma Tomatoes, seeded and thickly sliced
2 cups sliced mushrooms
1.5 tablespoons minced garlic
Salt and pepper to taste
3-4 tablespoons thousand island dressing

Directions

1. Drizzle olive oil over a large nonstick frying pan on medium heat 2. Add potatoes, stir, then cover for 10 minutes 3. Add onions, peppers and garlic, then sauté and continuously stir for 10-15 minutes, or until veggies are wilted 4. Add tomatoes and mushrooms (if using), then stir and cook for another 5-7 minutes 5. Remove from heat once all veggies are wilted and potatoes are golden 6. Drizzle thousand island dressing over potato hash, then serve 7. Enjoy!
