Grilled Vegetable Skewers

Ingredients
·12” long wooden skewers
·2 red-skinned potatoes
·2 medium zucchini
·1 medium eggplant
·1 large onion, peeled
·1 cup cherry tomatoes
·1-2 bell peppers, cored
·1 cup white mushrooms (optional)
· ½ cup olive oil
·Fresh minced rosemary (optional)
·salt/pepper to taste
Our boys are 6 & 8, demolishing humus carrot snack… we run out of Langtons carrots so prepare more (still organic and from a top-end supermarket!). No joke, they announce that the new carrots are nowhere near as tasty. Well done Langtons!
