Pumpkin Protein Bars

Pumpkin Protein Bars

Ingredients

1 cup oat flour
3/4 cup pumpkin puree
1/2 cup vanilla protein powder (I used Aloha)
3 tablespoons pure maple syrup
1/2 tablespoon pumpkin pie spice
2 teaspoons cinnamon
Vanilla or pumpkin flavored Greek yogurt, to spread on top

Directions

In a bowl, mix all ingredients (except yogurt) until a cookie-dough like consistency is reached. Spray/rub a baking dish with a little coconut oil to prevent sticking. Smooth out a thick layer of the pumpkin protein bar mix onto the baking dish. Cover with Saran wrap, then place it in the fridge for 1 hour or so. Remove from the fridge, spread with yogurt, sprinkle with cinnamon, and slice into bars. If you want more sweetness, drizzle on some more maple syrup, then enjoy!

Our boys are 6 & 8, demolishing humus carrot snack… we run out of Langtons carrots so prepare more (still organic and from a top-end supermarket!). No joke, they announce that the new carrots are nowhere near as tasty. Well done Langtons!
