Seasoned Spinach Sushi

Ingredients
For the rice
2 C sushi rice
4 T rice wine vinegar
1 T sugar
For the filling
400g spinach
1T sesame oil
0.25 C sesame seeds
0.5 t salt
1 medium-sized red capsicum
1 avocado
1 spring onion
Half a cucumber
Fresh coriander
Nori (seaweed) sheets (6)
Unexpected side benefit is we eat more veggie meals because we plan around our veg box not around meat purchases, so it’s worked out cheaper and healthier.
