Spinach and Rice Pilaf

1 onion, diced
1 carrot, diced
3 cloves garlic, minced
¼ c pinenuts or slivered almonds
2 c cooked rice
4 T butter
4 T olive oil
½ c heavy cream
4 c water or vegetable broth
2 or 3 handfuls spinach
salt and pepper to taste
