Zingy cauliflower fritters

Ingredients

These quantities make about 12 fritters
1/2 cup flour
3/4 tsp salt
2 eggs, beaten
1/4 cup milk
1/2 cup grated cheese
1/4 cup chopped herbs;parsley or coriander
1/4 large or 1/2 small cauliflower
1 small onion chopped
2 cloves garlic, smashed
spices; 1/4 tsp each ground cumin, ground coriander, ground cinnamon
1/4 tsp turmeric (optional)
2 tbs oil
unsweetened natural yogurt
1 carrot grated
Chopped coriander or parsley

Directions

To make the dressing: mix together yogurt, grated carrot and chopped herbs and set aside for the flavours to develop To make the batter, whisk together the flour,salt, milk, eggs, cheese and herbs Cut cauliflower into small florets and mix with chopped onion, garlic and spices Add cauliflower mixture to batter and stir gently until cauliflower is well coated In a large non stick fry pan or wok, heat some oil Cook tablespoonfuls of cauliflower batter for about 2-3 minutes each side until lightly brown, heating more oil as needed Drain cooked fritters on kitchen paper Serve fritters with yogurt dressing and some fresh greens or salad

We cook in portions and freeze our veg box ingredients. Then each evening we enjoy combining elements of this seasonal goodness in different meals. A few herbs and dressings or sauces means each meal is new, quick and as healthy as can be.
